Spinach Tofu Skillet

One of my favorite things to make is what I call Spinach Tofu Skillet. It is healthy and tasty, and you can customize it to your own liking by adding other vegetables or spices, and if you're not a tofu lover, you could use diced chicken, instead. My favorite version is:

Ingredients:
1 block of extra firm tofu (or two chicken breasts)
1 bunch of chopped cilantro
1 tsp thyme
1 bag of baby spinach
3 green onions, thinly sliced
2 tbsp olive oil
crumbled feta

Wash the baby spinach, and chop the cilantro. Dice the tofu or chicken, and, in a large skillet, saute in olive oil with the green onions. NOTE: if you're using chicken, it's best to make sure the pieces are cooked thoroughly, then adding the green onions so the onion doesn't burn. Sprinkle the thyme over the tofu and onion and stir lightly, then add the cilantro and cook on low heat until it starts to wilt.

Remove this mixture and put it in a bowl on the side, and put the washed baby spinach in the skillet. Drizzle a small amount of olive oil over the spinach and stir. It won't take long for the spinach to wilt - once it does, drain the juice and then add the tofu mixture back to the skillet with the spinach. Stir lightly until it is evenly mixed.

Serve over rice and sprinkle with feta cheese.
