
Creamy Chicken Mixture
2 Cups Chopped Cooked Chicken
1 Small Can Green Chiles
1 Can of Healthy Request Cream of Chicken Soup
1 Tablespoon of Cumin
8 oz Fat Free Sour Cream
2-10 oz cans of Enchilada Sauce (Red)
Aprox. 18 Corn Tortillas
1 Bag Reduced Fat Mexican Blend Cheese (*Weight Watcher's has a great product that melts nicely and doesn't taste bad at all)
Directions: Begin by heating your oven to 375 degrees.
Mix all ingredients except for tortillas, cheese, and enchilada sauce. Spray baking dish with Pam. Spoon out several spoons of enchilada sauce in the bottom of a 3qt baking dish then top with 6 tortillas, top tortillas with more enchilada sauce, creamy chicken mixture and cheese. Add 6 more tortillas, top with enchilada sauce, add remainder of creamy chicken mixture, and top with cheese. Top with 6 more tortillas covering them with the remainder of the enchilada sauce and the rest of the cheese. Cover with tin foil and bake for at least 30 minutes. Upon seeing the casserole bubbling remove tin foil and allow to bake for an additional 5-10 minutes.
Serve with Fat Free Sour Cream & Freshly Diced Onions! If you track your Weight Watcher's Points this dish is aprox. 4 pts per serving & it serves 12 generously!
